Abstract
Liq uid s m o k e r e f e r r e d in t his r e s e a r c h is t h e liq uidiz e d s m o k e o b t ain e d f r o m c o n d e n s e d pyrolyses reaction. This research used oil palm shell and coconut shell and aimed to determine liquid smoke rendemen, ter, charcoal, and liquid smoke compositions obtain ed from each material. This research was done by pyrolyzing oil palm shell and coconut shell, then obtained liquid smoke was condensed. The crude liquid smoke produced from the condensation then was distilled, producing liquid smoke fraction one, liquid s moke fraction two, and ter. The observation was done on liquid smoke, ter, and charcoal rendemen. GC - MS was used to determine liquid smoke compositions. The result showed that water content of oil palm shell and coconut shell are respectively 11.67 % and 12.42 %, and the bulk density are respectively 0.573 gram/ml and 0.41 gram/ml. Oil palm s h ell p r o d u c e d 7 5 . 5 6 % c h a r c o al, 7 . 3 2 % liq uid s m o k e , a n d 0 . 8 1 3 % t e r . W hile c o c o n u t s h ell produced 67.78 % charcoal, 12.39 % liquid smoke, and 0.63 % ter. Liquid smoke prodeced from oil palm shell has higher content of alcohol, phenol, furfural and acetone than liquid smoke prodeced from coconut shell. However the acetic acid content was lower.
Key words : liquid smoke, composition, oil palm shell, coconut shell.
