MEMPELAJARI SIFAT MINYAK SAWIT DARI BRONDOLAN PADA PERLAKUAN LAMA STERILISASI DAN JUMLAH WATER DILLUTION YANG BERBEDA.
Abstract
The purpose of this study is to examine variations in sterilization time and the amount of water dilution used on the properties of palm oil and the degree of separation of oil from the brondolan raw material. In this study using a divided plot plan (RPT), as the main plot is the sterilization time at 121oC temperature consisting of 2 levels, namely S1: = 30 minutes and S2 = 60 minutes, then as part of the plot is the addition of hot water water dillution (W), consisting The 3 levels are W1 = 1: 1; W2 = 1: 0.5; W3 = 1: 0. Then the percentage of oil, free fatty acids, water content, and impurities were examined. The study was conducted 2 times. The data obtained were then analyzed for variance and if there was an effect continued by Duncan's test at 5% (Gomesz and Gomez 1984).The results showed that the sterilization time treatment (S) affected the percentage of separate oil, peroxide number and did not affect the free fatty acid levels, water content. The comparison treatment of the amount of water dillution (W) affects the percentage of separate oils, free fatty acids, water content. Based on the results of the analysis of the percentage of separated oil and free fatty acids. Brodolan sterilization treatment with a time of 30 minutes and a water dillution ratio of 1: 0.5 gives the best percentage of oil separation 51.26%, free fatty acid 3.04%, moisture content 0.73%.
