Abstract


T h e r e s e a r c h is a b o u t D o d ol Alo e v e r a w hic h aim e d t o s t u d y it s w a t e r a c tivit y , t e x t u r e , acceptance level, and its self life. Previous researhes mentioned that the water activity of Dodol Aloe vera was relatively high (more than 0.74%), such condition has e nhanced the growth of mold and made the Dodol Aloe vera self life short. In general it is believed that Glycerol and Sorbitol have the ability to decrease water activity so the food product self life increases. In this research, Sorbitol and Glycerol addit ions were given to various humectants concentration (0%, 3%, 4.5%, and 6% of the d o u g h o f D o d ol Alo e v e r a ) . T h e a n aly sis w a s d o n e o n w a t e r a c tivit y a n d a c c e p t a n c e le v el. T h e favourite Dodol was stored for 14 days and its molds growth were analyzed every 2 days. Its water content as well its texture were compared to those of control (0%). The result showed that the use of humectants could decrease the water activity of Dodol Aloe vera. It was found that concentration of 6% was the best humectants addition as it signified 0.65 water activity. Its self life was longer than the control. In addition to such results, the researchers also recorded that the storing phase within 4 days is indicated the same water content of 26.20%, texture 3.05 N, and deformation of 55.25%. Dodol with 6% of Sorbitol concentration had indicated good acceptance and longer self life than those of control (0%). Its self life was 14 days while the control was only 8 days.
