Abstract


T his r e s e a r c h w a s aim e d t o g e t s uit a ble m e t h o d f o r a n t h o c y a nin e x t r a c tio n a n d in f o r m a tio n o f anthocyanin stability toward UV light. This experiment adopted Completely Block Design with two factors. First factor was the variation of solvents consisted of water, water and ethanol (1:1), water and isopropanol (1:1) and water , ethanol and isopropanol (1:1:1). The second factor was length of extraction: 1 hr and 2 hr. The extracts were analyzed for anthocyanin, total acid , pH and colour stability of anth ocyanin toward UV light. T he result showed that variation of solvent and length of extraction effected the anthocyanin obtained. Highest anthocyanin level (234.25 mg/l) was obtained by extraction using combined solvent water and etanol, with total acid 2. 31%(db) and pH 2.56. Extraction for 2 hr give higher result than 1 hr. Extract from procedure involving combination watert and ethanol was more stable toward UV light up to 6 days compared to the other extracts.
